Meet Rikke & Morten Storm Overgaard

With Novel Farm farm project, Rikke & Morten, owners of Restaurant Moment, take the next step in transforming the way we eat and grow our food. Rikke and Morten are turning a traditional, cultivated field into a sustainable and aesthetically pleasing agroforestry system with an abundance of trees, plants and bushes as well as a lake and a meadow full of flowers. As a whole, this new eco-system will create a welcoming habitat and fertile ground for the local biodiversity to flourish. As a consequence, Novel Farm will build healthy soil and support the microbiome in the soil while growing nutritious produce. Along the way, Rikke and Morten will investigate and measure the impact on the soil and biodiversity of the system in a variety of ways in order to monitor the impacts of the system on the overall biodiversity and soil health.
